I have never made King Ranch Chicken, but it is on my cooking bucket list. I found this recipe from The Pioneer Woman and it looks amazing!Ingredients:

1 whole chicken, cut into 8 pieces salt and pepper to taste 2 tablespoons olive oil, divided

2 cans (10 oz each) diced tomatoes with green chilies, undrained 1 can (14.5 oz) diced tomatoes, undrained 1 onion, chopped

4 cloves garlic, minced 3 tablespoons chili powder 2 teaspoons ground cumin

1 teaspoon dried oregano leaves 1 teaspoon paprika                 Instructions:

Sprinkle chicken with salt and pepper. In a large skillet over medium-high heat, heat 1 tablespoon olive oil. Add chicken; cook for 6 minutes per side or until browned.

Remove chicken from skillet; set aside.                  To the same skillet over medium-high heat, add remaining olive oil. Add onions and garlic; cook for 3 minutes or until onions are translucent.
