4. To the same skillet , add garlic , shallot ,and butter . Sauté for a minute until fragrant . Stir in flour and cook for another minute . Pour in chicken broth , whisking constantly until smooth . Add wine (if using), bay leaf , thyme , salt and pepper . Bring mixture to a boil then lower heat and let simmer for about 10 minutes
5. Return cooked chicken back into the saucepan .
