Fresh Strawberry Ice Cream Pie
Strawberries are only available in the peak spring season, from April to June. Now, serve yourself with a light recipe made from strawberries after a fully fledged meal.
- 30 chocolate wafers
- 5 teaspoons butter
- 1 large beaten egg white
- Salt to taste
- 1 pound fresh strawberries, chopped
- 1/4 cup strawberry jam
- 1 tbsp fresh lemon juice
- 2/3 cup fat-free condensed milk, sweetened
- 4 cups frozen low-fat whipped topping
Preheat oven to 350 degrees. Grind the wafers and add butter, egg, salt to combine. Spread the mixture onto a baking tray and bake for ten minutes.
Add sliced strawberries in a large bowl and stir with the brisk addition of jam and lemon juice. Fold in the whipped topping and freeze. Arrange this luscious mixture over the pie and serve with sliced strawberries.
The Candied Cherry Dessert
Well, who can say no to a luscious fresh cherry dessert!
- 1 1/2 pounds fresh cherries with stems
- 1 cup sugar
- 1/3 cup lime juice
- 1/4 cup water
- 1 cup rye whiskey or Bourbon
Add the cherries in a glass bowl. Boil the combination of water, sugar, and juice in a saucepan. Now, add a cup of bourbon to the mixture and boil.
Finally, pour this mixture over cherries and serve it chilled.
The Colorful Red and Yellow Watermelon Salad

- 1/2 red watermelon
- 1/2 yellow watermelon
- 1 cup fresh lemon juice
- 2/3 cup sugar
- 1/2 cup vodka
- 1/3 cup black raspberry liqueur
- Fine sea salt
- 1 tbsp chopped fresh mint
- Fresh Mint Sprigs to Garnish
Scoop the watermelon into small circular pieces. Whisk them together with a lemon juice, sugar, vodka, and liqueur. Cover and chill for two hours.
Toss them and serve with fresh Mint Leaves. And, a refreshing cocktail with a salad is just like a cherry on the pie.
Rhubarb and Raspberry Pie
Technically a vegetable, rhubarb is often used as a fruit for making tarts and pies.

- 2 tablespoons tapioca
- 4 1/2 cups raspberries and rhubarb
- 1/4 cup cornstarch and almond extract
- 2 tablespoons blackcurrant liqueur.
- 1/8 teaspoon salt
- 6 tbsp flour
- 2 tablespoons brown sugar and butter
Grind Tapioca, raspberries and add salt, brown sugar and butter to combine. Roll 9-inch dough and place it on a baking tray. Let the dough settle and add the tapioca and raspberry mixture to the setting. Bake for 10 minutes in the oven by setting it at 375 degrees.
