What foods should not be canned?

If you attempt to water bath can them, they will spoil and could make you sick. -Dairy products: Milk, cheese, sour cream, etc. cannot be safely canned because they will spoil. -Eggs: While you can find some methods for canning eggs online, it is generally not recommended as the results are often poor and the food safety risks are high.

-Fats and oils:These will go rancid when canned and should therefore be avoided. -Some fruits and vegetables: Certain fruits and vegetables like garlic, potatoes, tomatoes (unless you acidify them first), winter squash, melons, figs, grapes, bananas, avocado ,and eggplant also cannot be safely canned using the water bath method. With many of these items however you CAN freeze them instead which is a much safer option.
